PENGARUH VARIASI WADAH DAN SUHU TERHADAP PEMBUSUKAN BUAH SEMANGKA POTONG (CITRULLUS LANATUS.)

Semangka (<em>Citrullus lanatus.</em>) merupakan buah yang sering dijual dan disajikan dengan cara dipotong setengah atau seperempat bagian. Pada semangka potong, sel dapat rusak akibat pengirisan menyebabkan proses pembusukan. Buah potong memerlukan perlakuan penyimpanan sesuai agar memperlambat pembusukannya. Penelitian ini bertujuan untuk mengetahui pengaruh perbedaan variasi wadah suhu terhadap waktu pembusukan potong. Percobaan dilakukan selama 3 hari menggunakan disimpan pada terbuka, plastik <em>wrapping</em>, tempat makan serta lemari pendingin 4˚C ruangan 20˚C – 25˚C. Parameter diteliti adalah warna, tekstur, ukuran, susut bobot dari semangka. Hasil penilitian menunjukkan metode berbeda berpengaruh Metode paling baik wrapping (4℃) warna masih merah, tekstur agak lembek, presentase rendah sebesar 3.3%, penurunan ukuran panjang 0.1 cm lebar 1 cm.
